A cold sandwich on a hot day is always a go-to meal any time of the day! When summer is at its peak, you don't feel like standing at the stove all day. This sandwich doesn't require turning on the stove or oven. Chop, mix, and assemble, and you are done! That's the magic of this recipe. Saves you time and effort. Let's get started. It is super easy to make this Sandwich.
Homemade hummus and spicy sauce complement each other really well. This is a versatile sandwich; you can use any vegetables you have on hand. This recipe makes eight total sandwiches. I have used olive oil Tuscan Bread; you can use any kind of sliced bread, but fresh baked bakery bread makes this sandwich out of this world.
I have also used homemade hummus. I have a roasted red pepper hummus recipe posted on my blog. I will include the link. You can use the same recipe to make hummus, or omit the roasted red pepper and make regular hummus. You can definitely use store-bought hummus.
Ingredients
Bread
1 medium-sized English cucumber, sliced thinly
1 beefsteak tomato, sliced
1/2 cup sliced green olives or kalamata olives
6 pieces of marinated artichoke hearts
1 small red onion, sliced
Lettuce
Hummus as required
Sliced pepper jack cheese(optional)
Ingredients for spicy spread
2 tbsp thick Greek yogurt
2 tbsp mayo
1 tsp Calabrian chili pepper sauce (store-bought from Trader Joe's)
Method
Let's make spicy spread first; it is pretty simple. Just mix all the ingredients for spicy spread, and it's ready!
Once everything is ready, it's time to assemble the sandwich.
Spread a generous, even layer of hummus onto the first slice of bread. Next, apply the spicy condiment evenly across the surface of the second bread slice. Place a crisp layer of lettuce directly onto the spiced slice to create a moisture barrier. Arrange remaining veggies on top of lettuce. If using cheese slices, add it on top of veggies.
Sandwich Assembly
Lastly, flip the hummus-loaded slice onto the vegetable stack, cut in half, and enjoy your sandwich!
