Sprouted Moong Beans Salad

 
Moong beans or also spelled as 'Mung Beans' in western world, is a popular legume commonly used in India in various recipes. Super healthy, these beans could be used whole, sprouted or split, in curries, salads, sandwiches, dosas, parathas and more. People are finding innovative ways to use moong bean in their daily diet. It has both nutritional and health benifits. 

It can be sprouted, or cooked without soaking overnight(in pressure cooker or instant pot). This sprouted Moong Beans Salad is perfect and a quick way to fulfill your protein content for the day. It can be eaten for lunch, as a light dinner, or an afternoon snack when that craving hits you. 

Lets get started.

Ingredients

1 cup sprouted moong beans
1/4 cup diced cucumber
1/4 cup diced red onion
1/4 cup diced tomato(or 3-4 grape/cherry tomatoes)
1/4 cup shredded carrot
Cooked and shredded beetroot 1/4 cup
2 tbs each chopped mint and cilantro
2 tbs roasted peanuts(I have used nimbu and pudina flavored roasted peanuts just because I had them but you can use any roasted peanuts)

For Dressing
2 tbs lime juice
1/2 tbs extra virgin olive oil
1/8th tsp cumin powder
1/2 tsp chat masala
1/8 tsp chili powder, for little heat(optional)
Salt to taste

Method
Steam the sprouted moong beans. I steamed them in pressure cooker(without whistle) for 3-4 minutes. You can also steam then in the steamer over boiling water for 5 minutes.  It should be cooked but not mushy, slight crunchy and should still hold its shape.

In the mean time, you can chop and prep all the vegetables. Mix all the ingredients for dressing in a bowl and mix nicely. 
Add all the veggies and moong beans in a bowl.

Lastly add the prepared dressing and mix everything together, make sure all the veggies and moong beans are coated in the dressing. In the end for crunch add roasted peanuts, and enjoy this delicious and wholesome salad!

Variations-:
  • You can add nuts or seeds of your choice instead of peanuts for crunch.
  • Add pomegranate  seeds for a pop of color, nutrition and taste.
  • Add veggies of your choice.

कोबीची पचडी / Kobichi Pachadi / Shredded Cabbage Salad

This is a typical Maharashtrian koshimbir or salad recipe. It is a simple side dish which can be eaten with roti or just as a salad. This is not a yogurt based salad though that's why I guess it is called pachadi. It is quick and easy to make, with few ingredients you can have a healthy and tasty side dish. Ingredients(serves 2-3) 2 cup shredded cabbage 2 tbs roasted coarse peanut powder 2 tsp sugar 1 1/2 tsp lime juice Salt as per taste 1 tbs chopped cilantro For Tempering 2 tsp oil 1/4 tsp mustard seeds 1/8 tsp cumin seeds A pinch of asafoetida 1/8 tsp turmeric powder 1 small green chili cut into 3-4 pieces Method In a serving bowl, assemble together, shredded cabbage, coarse peanut powder, sugar, lime juice, chopped cilantro and salt. Kulith Pithla(कुळीथ पिठलं )

पिठलं/pithla is a comfort food for most of the Maharashtrian  people. Pithla made from chickpea flour is more common than Kulith Pithla. Many Maharashtrian people are unaware of kulith pithla. English name for kulith is horse gram. In Kokan region kulith is more popular, it is used to make pithla as well as उसळ . Kulith powder is easily available in market in India.
