North Indian cuisine is very popular all over the world. Punjabi cuisine is very rich and flavorful.
Amritsar is a city in Northern part of India in the state of Punjab. I guess this dal originated here and hence the name Amritsari dal. But it is also called as Langarwali dal. This dal is usually cooked and served in Gurudwaras for langar.
Doesn't matter what you call, it tastes delicious.
Authentically this dal is made with whole urad dal(same dal used to make dal makhani or maa ki dal) and chana dal but I made it with chilkewali urad dal and chana dal. Recipe is quite simple and it is made in Insta Pot so it's even quicker!
Ingredients
1/2 cup chilkewali urad dal(aslo known as urad dal with skin)
1/4 cup chana dal
1 tbsp ginger-garlic paste
1 small onion chopped
1 small tomato chopped
2 tsp coriander powder
1/4 tsp garam masala
Salt and chili powder as per taste
1/4 tsp turmeric powder
1/4 tsp amchur powder
1 tbsp ghee/clarified butter
1/2 tsp cumin seeds
Method
Soak both dals in water at least for couple of hours. Dals can be cooked in Insta pot without soaking but I always prefer soaking them before cooking to reduce cooking time. But if your are on crunch time then use unsoaked but washed dals.
Press saute button on Instapot. Once it displays Hot add ghee. Let ghee heat a bit, add cumin seeds, ginger-garlic paste.
Add chopped onions and saute until transclucent. Throw in coriander powder, turmeric powder and chili powder. Saute for a couple of seconds, add chopped tomatoes.
Saute again until tomatoes are mushy, add a splash of water so masala doesn't burn. Add both the dals, salt and garam masala. Cancel saute button. Add 1.5 cup of water. Pressure cook on High for 20 min.
Let the pressure release naturally for at least 10 min but if you have time let all the pressure release naturally. Open the lid once pressure is released and stir well and mash with ladle to get the perfect texture. If you think dal is very liquidy press saute button to thicken the dal a bit and if dal is too thick adjust the consistency by adding some water.
Serve with rice or roti or naan.
