Mexican Quinoa Wraps

Let me share you a short story behind this recipe. We were visiting Williamsburg, VA and were looking for a place for quick bite. We ended up going to "Aromas", it was a small cafe but food was delicious! The great part was it had good amount of vegetarian options. I ate this wrap there and all the flavors just blended so well in my mouth that I thought of  making this recipe at home.  Let's get started!


Ingredients

8 wheat tortillas
1/3 cup Quinoa 
1 tsp olive oil
1 small zucchini cubed into 1/2 inch cubes
1/2 green pepper cut into 1/2 inch cubes
1/2 red pepper cut into 1/2 inch cubes
1 small jalapeño deseeded finely diced
1/2 tsp cumin powder
1/4 tsp paprika
1 cup cooked black beans
Favorite hot sauce as required
Favorite jarred salsa 
2 garlic cloves minced
Salt as per taste
1 avocado pitted and sliced
Sour Cream as needed

Method
Cook quinoa according to the package instructions and keep aside. Next saute zucchini, green pepper, red pepper, minced garlic and jalapeno in a teaspoon of olive oil until veggies are slightly cooked but still crunchy. Keep aside these veggies. Now combine veggies, quinoa, cooked black beans, salt, cumin powder, paprika and salsa. You can make this delicious mixture a day in advance.

Now to assemble wraps, place a tortilla on a flat surface. Add a few dashes of hot sauce. Fill tortilla with wonderful quinoa mixture, top it off with few small dollops of sour cream and sliced avocado and wrap it tightly.
                                    

Cut in half and enjoy your delicious wrap. Serve it with some tortilla chips(just like they serve at Aroma's ) but unfortunately I didn't had any so used fried jalapenos instead.

 The idea for this post came from one of my dear friend. She one day asked me what kind of green leafy vegetables you make. I said to her that I make quite a few. Kulith Pithla(कुळीथ पिठलं )

पिठलं/pithla is a comfort food for most of the Maharashtrian  people. Pithla made from chickpea flour is more common than Kulith Pithla. Many Maharashtrian people are unaware of kulith pithla. English name for kulith is horse gram. In Kokan region kulith is more popular, it is used to make pithla as well as उसळ . Kulith powder is easily available in market in India. I have looked for it here in US but still no luck, have to get it from India every time I visit. For some people it takes time to adjust to its nutty and strong flavor.
