Broccoli is a plant in cabbage family. It's flower head is used as a vegetable. Broccoli is commonly steamed, boiled or sauteed. It is high in vitamin c and also in dietary fiber. Long back, I had this cheesy broccoli soup and it tasted heavenly but it was very high in calories. But my mother in law made this simple broccoli soup with milk and I instantly fell in love with this soup. With very few ingredients, this broccoli soup is easy to make.
Ingredients(Serves 2)
2 cups roughly chopped broccoli
1 small onion chopped
1 tbs butter
1 (14.5 oz) can vegetable broth
1/2 cup milk
Salt and pepper as per taste
Method
Melt butter in a pot. Add chopped onion and saute until translucent. Next throw in chopped broccoli. Cover it and let it soften a bit for around 5-7 minutes stirring in between. Add vegetable broth and bring it to a boil and then simmer half covered until broccoli is nice and tender. Once cooled puree it in a blender reserving 1/3 cup of the liquid. The reason we are reserving the liquid is to give the soup a nice texture. Transfer the blended soup and reserved liquid in a pot, add 1/2 cup milk and gently heat the soup again. Season the soup with salt and pepper and that's about it, steaming hot broccoli soup is ready!
