I love vegetarian sandwiches! Mix and match different kind of veggies, use some kind of spread and you can have a nice and refreshing meal. By adding fresh herbs you can take mayonnaise to a whole new level. Using fresh herbs and spices makes the sandwiches even more refreshing. In this particular sandwich I have used rosemary and basil to jazz up the plain old mayo.
Ingredients(Makes 2 sandwiches)
4 bread slices(white or wheat)
2 green leaf lettuce leaves
1 small cucumber sliced
1 small tomato sliced
1 avocado(cut in half, remove the seed and slice, scoop out the slices and discard the outer skin)
1 small yellow pepper sliced(use whatever color pepper you have on hand)
Salt and Pepper as per taste
2 cheese slices(optional)
Herbed Mayonnaise
1/3 cup mayo
1/2 tsp freshly chopped rosemary
3-4 basil leaves chopped
Method
Mix together all the ingredients for herbed mayonnaise.
Apply herbed mayo on all the four slices of bread. Arrange lettuce leaves, followed by cucumber, yellow pepper, avocado slices and tomatoes. Sprinkle salt and pepper over the veggies.
Quick Tips-: While using rosemary remember to use just leaves and discard the woody stem.
