Stuffed Jalapenos.(भरलेली मिरची)

I love all kinds of Peppers, they are so colorful and flavorful. Jalapeno is one spicy pepper. This recipe is great to spice things up on your dinner table. I learned this recipe from my mom who is a great cook.


Ingredients

3 Jalapeno peppers
2 tbsp Chickpea flour(बेसन)
1 1/2 tsp fine Peanut powder(दाण्याचे कुट)
1/4 tsp Chili powder
salt as per taste
one small pinch dry mango powder (आमचूर)
1 tbsp canola oil plus few drops.
1 tsp mustard seeds

Method

Slice the jalapenos in the middle but don't cut throught it. You can scrape the seeds off if you don't want the heat from the jalapeno. 

Heat a pan on medium heat and add few drops of oil. Add chickpea flour and saute until you get a nice aroma. Turn off the gas. Put all the above ingredients except oil and mustard seeds in the flour and mix well.

Stuff each jalapenos with this mixture.


Put the remaining 1 tbsp oil in a pan ,let it heat and then add mustard seeds. As the seeds crackle add stuffed jalapenos, saute and let it cook with lid on for 10-15 minutes stirring in between. You will know it's done when peppers soften a bit and gets charred.

 The idea for this post came from one of my dear friend. She one day asked me what kind of green leafy vegetables you make. I said to her that I make quite a few. Ragi Kheer/नाचणीची खीर

Ragi is a power grain which has wonderous amount of health benefits. It is rich in calcium, iron, protein and fiber to name a few.  It is also known as Finger Millet or Nachnai in some parts. Ragi flour is made from this powerful grain and can be used in variety of ways. It can be used to make roti, bhakri, sweet kheer, thalipeeth, dosas, cakes, cookies and so on and so forth.   Even with its immense health benefits I feel we still haven't really embraced Ragi in our day to day diet. Todays recipe is a sweet preparation of ragi flour. It is actually a very good option for breakfast or post workout meal.
