Stacked Veggies and Herbed Mayo Sandwich

I love vegetarian sandwiches! Mix and match different kind of veggies, use some kind of spread and you can have a nice and refreshing meal. By adding fresh herbs you can take mayonnaise to a whole new level. Using fresh herbs and spices makes the sandwiches even more refreshing. In this particular sandwich I have used rosemary and basil to jazz up the plain old mayo. Ingredients(Makes 2 sandwiches) 4 bread slices(white or wheat) 2 green leaf lettuce leaves 1 small cucumber sliced 1 small tomato sliced 1 avocado(cut in half, remove the seed and slice, scoop out the slices and discard the outer skin) 1 small yellow pepper sliced(use whatever color pepper you have on hand) Salt and Pepper as per taste 2 cheese slices(optional) Herbed Mayonnaise 1/3 cup mayo 1/2 tsp freshly chopped rosemary 3-4 basil leaves chopped Method Mix together all the ingredients for herbed mayonnaise. Apply herbed mayo on all the four slices of bread. Arrange lettuce leaves, followed by cucumbe
