Stuffed Karela

Karela is also commonly known as bitter gourd. As the name suggest it is very bitter in taste and so not many people are big fan of Karela's. But unlike others I love karela.  I have also eaten Karela chips in India, they were crunchy and salty and simply delecious.  I make 3-4 different varieties of karela sabzi and one of them is stuffed karela. Today's recipe is inspired by North Indian cuisine. It is little bit time consuming but made with minimum ingredients.  Ingredients 5 small Karela's 1 tbs + 2 tbs canola oil 2 large onions  1 1/2 tsp coriander powder 1/8 tsp chili powder 1 tsp dry mango powder/amchoor Salt as required Twine or white cotton sewing thread to tie the karelas Method While picking karela's from market look for small one's, almost the size of your finger or slightly bigger than that. Santa Fe Wraps

Wraps are more convenient to eat if compared with sandwiches. Don't get me wrong I love sandwiches as much as I love wraps. In wraps all the ingredients are tucked inside tortilla and rolled, so you don't have to worry about ingredients falling out like in a sandwich. Today's wrap recipe is inspired by Mexican cuisine. Grilled veggies and salsa make these wraps tastes ohh so good.  Ingredients 6 burrito size flour tortilla 2 Zucchini diced 1 small green pepper diced 1 cup fresh or frozen corn kernels 1 jalapeno diced Store bought salsa as required or  Click  here for home made salsa recipe(Get hot salsa if you are a spicy eater) 1 cup canned black bean Sour cream as required Mexican cheese as required Hot sauce as required Method Preheat oven for 375 F. Grill Zucchini, corn, green pepper and Jalapeno pepper for 15 minutes or until slightly charred.
